    Prepare

    Cook the potato pancakes until crisp at the edges and tender inside. Mix the fresh cheese with sour cream and half the chives. Season the radishes and spring onions lightly. Place a spoonful of the fresh-cheese cream on each warm pancake, then add the real smoked sprats carefully without breaking them. Finish with the remaining chives and black pepper.

    Serve

    Serve while the pancakes are warm. Use a plain stoneware plate and keep the composition direct: crisp potato, cool fresh cheese, spring vegetables and smoked fish.
