SIA Unda is the Latvian seafood manufacturer behind Diplomats. Seafood production began at the Engure site in 1907, and production knowledge has continued to develop in the same place.

Raw material intake

Rodding

Each fish is threaded onto a smoking rod by hand, with its condition and spacing checked before the racks move forward.

Smoking and cooking

Time, temperature and the applicable smoking or cooking programme are monitored and recorded for every batch.

Packing

Skilled hands arrange the prepared fish carefully in each tin, while presentation, fill and format are checked throughout packing.

Filling and sealing

The specified oil or sauce is added in a controlled fill before each container is sealed, with fill level and closure integrity checked.

Sterilisation

Sealed products are sterilised in autoclaves under documented time, temperature and pressure controls appropriate to the product.

Ready goods packing

Released containers are labelled and packed for handling, with labels, batch codes, packaging and traceability information verified.

Release and export

Finished goods are released only after the required records and results are reviewed, then prepared for customers in Latvia and export markets.

Laboratory testing

Laboratory testing behind every decision.

Our laboratory has supported everyday seafood quality control since 1973. It analyses microbiological, physical and chemical indicators relevant to raw materials, production and finished products.

When we cannot complete a test in-house, we assign it to a recognised external laboratory. The purpose is practical: reliable decisions, documented results and food-safety evidence for customers.
