    Prepare

    Toast the ciabatta until crisp at the edges but tender inside. Rub once with the cut garlic. Grate or crush the tomatoes, season lightly, then spoon them over the warm bread. Lift the sardines carefully from the tin and arrange them whole. Finish with a little oil from the tin, rocket, torn parsley, black pepper and a restrained squeeze of lemon.

    Serve

    Serve immediately on a cool stone or ceramic plate. Keep the open tin beside the plate: it identifies the product honestly and invites a second serving.
