Sprats, natural hardwood smoke, rapeseed oil and salt. The recipe is concise because the work carries the character. Carefully selected sprats are traditionally smoked to a golden finish, giving them a distinctive but balanced aroma. We prepare the product in Engure, Latvia, at a site where seafood production began in 1907. Ownership and organisations changed across that history; Latvia, the place and its accumulated production knowledge remain central to the product made there today.

We carefully select the sprats and traditionally smoke them to a golden finish using natural hardwood chips. Our composition is equally concise: 70% smoked sprats (Sprattus sprattus), rapeseed oil and salt. The smoke gives character without hiding the fish.

SERVES TWO INGREDIENTS 1 pack Diplomats Smoked Sprats in Oil 4 small potato pancakes 100 g fresh cheese 2 tablespoons sour cream 1 tablespoon finely cut chives 2 spring onions A small bunch of radishes Black pepper PREPARATION Cook the potato pancakes until crisp at the edges and tender inside. Mix the fresh cheese with sour cream and half the chives. Season the radishes and spring onions lightly. Place a spoonful of the fresh-cheese cream on each warm pancake, then add the real smoked sprats carefully without breaking them. Finish with the remaining chives and black pepper. SERVING Serve while the pancakes are warm. Use a plain stoneware plate and keep the composition direct: crisp potato, cool fresh cheese, spring vegetables and smoked fish.
